JUDGING
Head cooks are required to attend the cooks meeting on the morning of the cookoff. All other interested parties are also invited to attend. At this time 9" X 9” styrofoam turn-in trays and one sheet of aluminum foil are distributed. Meat product is placed on the foil
which is placed flat in the bottom of the tray. Rules are explained verbally by an LSBS Representative to the assembled cooks.
The Head Judge or designated representative will “inspect” each tray as it is turned in by the cook. Each Brisket tray is checked for proper the number of slices as well as proper thickness. The Spare Ribs are counted and the Chicken is checked to be sure it is a half chicken (Not disjointed).
When all trays are received they are numbered at random after the trays have been mixed several times to insure anonymity of the cook.
Trays received after the turn-in window has passed may be accepted but will not be judged. Trays which have unusual markings i.e., ball point pen marks or any other marks which appear to have been added after the initial signing will be disqualified. If something is apparent to the cook he/she may bring the tray back to the Head Judge who will replace the entire tray. Tickets must be returned as well.
